L\u2019abstin\u00e8ncia consistia en no menjar carn durant certs dies o setmanes.<\/p>\n<p>&nbsp;<\/p>\n<p>Per tal de fer atractiva l\u2019abstin\u00e8ncia, la\u00a0<strong>tradici\u00f3 popular va idear unes menges poc comunes<\/strong>\u00a0durant la resta de l\u2019any, fetes amb productes de l\u2019\u00e8poca,\u00a0<strong>i que resultaven for\u00e7a saboroses i nutritives. El panad\u00f3 d\u2019espinacs<\/strong>, \u00e9s un menjar que no contradiu les normes de l\u2019abstin\u00e8ncia i que alhora \u00e9s un menjar delici\u00f3s. A casa nostra \u00e9s tradici\u00f3 fer els panadons a casa per setmana santa i, tal com\u00a0<strong>les nostres \u00e0vies ens van ensenyar i ho van deixar escrit<\/strong>, aix\u00ed us els animo a fer. No us en penedireu.<\/p>\n<p>&nbsp;<\/p>\n<p>Tamb\u00e9 servir\u00e0 aquesta recepta per con\u00e8ixer la paraula\u00a0<strong>\u201cfunyir\u201d<\/strong>, que nom\u00e9s l\u2019he sentit per definir\u00a0<strong>el proc\u00e9s de reducci\u00f3 dels espinacs.<\/strong>\u00a0Diuen els diccionaris que la paraula \u201cfunyir\u201d, ve del mot \u201cf\u00e8nyer\u201d que significa treballar la pasta de cada pe\u00e7a de pa per tal que prengui consist\u00e8ncia abans de donar-li la forma. Diuen que etimol\u00f2gicament ve del llat\u00ed vulgar\u00a0<em>fundiare<\/em>, \u2018furgar, remenar a fons\u2019, derivat de\u00a0<em>fundus<\/em>, \u2018fons\u2019.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Ingredients, per la pasta de 18 panadons:<\/strong><\/p>\n<p>&nbsp;<\/p>\n<p>2 kg d\u2019espinacs tendres.<\/p>\n<p>1 ou sencer batut.<\/p>\n<p>1\/2 vas d\u2019oli.<\/p>\n<p>1\/2 vas d\u2019aigua.<\/p>\n<p>1\/2 vas de llet.<\/p>\n<p>3\/4 de pastilla de llevat.<\/p>\n<p>Amassar i estendre.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Pel farcit:<\/strong><\/p>\n<p>&nbsp;<\/p>\n<p>2 kg. d\u2019espinacs tendres, triats, rentats i trossejats.<\/p>\n<p>Sal per funyir.<\/p>\n<p>Panses i pinyons a gust.<\/p>\n<p>2 dents d\u2019all a trossets<\/p>\n<p>Julivert trossejat Ben amanit d\u2019oli<\/p>\n<p>&nbsp;<\/p>\n<p>Fer amb la pasta i el farcit el panad\u00f3.
